Oreos - wrapped in a dainty little sugar cookie adorned with funfetti sprinkles! Yes please! A fun little package guaranteed to bring out your inner child and playful side. A fabulous and ingenious creation from food blog; Bakers Royale!
Ingredients:
3 cups of flour
1 tsp baking powder
½ tsp salt
½ cup butter, softened
½ cup cream cheese, softened
1 cup sugar
½ cup icing sugar
2 eggs
1 egg yolk
1 tsp vanilla extract
5 tbs nonpareils/sprinkles
24 Oreo cookies
Preheat oven to 180°C / 350°F and line a baking tray with baking paper.
Whisk flour, baking powder and salt together and set aside.
In a separate bowl cream butter, cream cheese, sugar and icing sugar until light and flufffy. In an other separate bowl lightly mix eggs and vanilla together then slowly add the egg mixture to the creamed butter mixture making sure to your beater is running on a medium-low setting. Beat until combined.
Fold in flour mixture with a wooden spoon and until fully combined.
Divide dough into four flat discs and refrigerate for a minimum of 3 hours.
Using one disc at a time, roll out dough out on a lightly floured surface to an approx 1/8" thickness.
Sprinkle nonpareils over the top then using the rolling pin roll the top surface once again to push the nonpareils into the dough.
Cut out 3.5" circles and place an Oreo cookie centered on top of one circular dough piece, then place another circular dough piece on top of the Oreo cookie then pinch the sides together then smooth out the pinched seam around the sides of the cookie.
Bake cookies for approx 10-12 minutes then cool on a wire rack.
