1/2 cup butter, softened
1 cup sugar
1/2 tsp vanilla extract
1 tsp lemon zest
1 tbs lemon juice, fresh
1/4 tsp salt
1/4 tsp baking powder
⅛ tsp baking soda
1 1/2 cup flour
1/2 cup icing sugar
Preheat oven to 180°C / 350°F and line two baking trays with baking paper.
Cream butter and sugar until light and fluffy. Add the vanilla, egg, lemon vest and juice and mix until well combined.
Stir through all other dry ingredients (minus the icing sugar) until just combined.
Add the icing sugar into a separate bowl or plate.
Roll mixture into balls the size of walnuts then transfer to icing sugar and roll to coat the entire surface.
Transfer to baking sheet and bake for 9 - 11 minutes or until bottoms begin to brown.
Remove and cool completely before removing from trays.
