Food Porn Thursdays.
You know those humdrum kind of days where you’re feeling forgetful, something is clawing insistently at your mind, you feel unsettled and unsure, nothing sates your appetite and you end up roaming around like a rotting zombie in search of your brain; or anyone’s brain for that matter. I’ve been wandering menacingly around like that for the past few days until this afternoon when I was struck by sudden inspiration of the baking kind. Well the inspiration stemmed from some hunger pains and a craving left unsatisfied due to a shortage in the pantry but either way I was grateful to be pulled out of that annoying funk.
Also my zombie state has been further induced by my WiFi connection whom has been annoyingly taking me for a ride lately. Whenever I turn on Le MacBook she just doesn’t seem to want to work with me for some reason, avoiding me like the plague or like I have cooties or something? A few weeks ago it kept disconnecting on me and this week it’s been super duper slow. Come to think of it, sounds like the WiFi is in a zombie state of her own. Shall I feed her some of these cookies and hope for the better?
I’d honestly try anything at this point since my throat is quite raw from all the nonsensical profanities I’ve been shouting at it. Anyhoo onto the actual cookies the original recipe called for all purpose flour which isn’t available or extremely hard to come by in Australia, so I just had to adjust and make do with simple plain flour and even ended up reducing the amount of butter. In the end they did bake! Huzzah! However they did grow out an alarming rate and did end up coming out of the oven relatively flat but nonetheless they tasted utterly delicious. Not to sweet thanks to the honey and delectably chewy. I think the next batch I’ll endeavour to leave the dough to chill further than the allocated time to keep in hopes of keeping them from spreading uncontrollably.
6 tbs butter
1 cup brown sugar
3 tbs honey
1 tsp vanilla extract
2 cups plain flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
170g dark chocolate, chopped
Preheat oven to 180°C / 350°F and line a baking tray with baking paper.
Combine butter and brown sugar until light and fluffy then add egg, honey and vanilla extract and combine.
Stir in the flour, baking powder, baking soda and salt then fold in the chocolate.
Cover and refrigerate for 30 minutes.
Place tablespoon sized balls onto the baking tray and bake for 8-10 minutes or until lightly browned.
Allow to cool on the tray before removing and serving.
